Women of Color - Yoga Classes with Maya Breuer

 Maya Breuer, RYT, a Certified Kripalu Yoga teacher with more than 20 years experience, is the founder and director of the Santosha School of Yoga and the national Yoga Retreat for Women of Color™. She has studied extensively with yoga masters in the Kripalu tradition in India . Maya is a member of the International Association of Black Yoga Teachers, the Kripalu Yoga Teacher's Association, the International Women of Vision and Action Group, and the National Yoga Alliance. She is also an affiliate of the International Yoga College and serves on the Kripalu Center Board of Trustees. In 2004 she received the first Yoga Trailblazer Award from the International Association of Black Yoga Teachers. Maya is a contributing author to Stephen Cope's "Will Yoga and Meditation Really Change My Life?" and the just published "Kripalu Yoga On and Off the Mat" ( December 2005). She is also a jazz singer and visual artist whose yogic philosophy incorporates these aspects of her creativity. Presently Maya is completing her first book, Soul Yoga.

Pear Salad with Mixed Greens
5 tablespoons of butter
1/ 2 cup and 3 tablespoon of brown sugar
4 tablespoons of honey
1 cup Chopped Walnuts
2 large Bartlett pears
1 cup of water
Pinch of cinnamon
Pinch of nutmeg
2 tablespoons Dijon Mustard
2 tablespoons balsamic vinegar
1/ 2 Cup Olive Oil
1 tablespoon of Garlic
1 teaspoon of shallots
Pinch of salt
8 endive leaves
4 ounces of baby mixed greens
1/ 4 cup of blue cheese
Parchment paper
Baking sheet

1. Put butter in a sauce pan over low heat.

2. Add ? cup of sugar and 2 tablespoons of honey to sauce pan and mix well until sugar melts.

3. Next add all walnuts and stir until walnuts are covered with brown sugar mixture.

4. Next cover baking sheet with parchment paper, and place coated nuts on the baking sheet. Set baking sheet aside and allow nuts to cool and harden.

5. Next preheat oven at 325 degrees

6. Wash pears then peel the skin off with a peeler.

7. Peel and core the pears and cut into halves.

8. Place pears in a baking dish.

9. Add water, cinnamon, nutmeg, 1 tablespoon of brown sugar and honey to the pears.

10. Cover pears with foil and place in the oven for 30 - 35 minutes at 325 degrees

11. Remove baked pears from the oven and let cool.

12. slice pears and place in a circle around a plate.

13. Next place endive leaves between pear slices. (alternate pear slice , endive leaf, pear slice, endive leaf etc)

14. place mixed greens in the center of the plate.

15. Top with Blue Cheese, and walnuts onto the mixed greens.

16. Drizzle vinaigrette over the entire dish.

17. Salt and pepper to taste and enjoy.


Procedures for Vinaigrette

1. Place Dijon mustard, balsamic vinegar, 2 tablespoons of brown sugar in a bowl and mix well.
2. Next add the olive oil and continue to mix.
3. Add shallots and garlic and mix well. (set vinaigrette aside)

Avocada Timbales: A Summer Time Pleasures

Avocado ice cream? a sweet and salty parfait? Frozen desserts go modern with sexy flavors and palate-surprising combos                                        

We tend to think of avocado as a vegetable, but in fact it’s a fruit, a very creamy one that lends itself to desserts. Cooks in Latin America and South Asia use it in shakes and frozen confections, so why not take the sweet route here?

Makes 6 to 8 servings

2 ripe avocados, scooped into chunks
2 tablespoons lime juice
1 14-ounce can coconut milk
1 cup heavy cream
1 cup sugar
Mango and lime for serving

1. Puree first 5 ingredients in a blender until smooth.

2. Churn in an ice cream maker according to manufacturer’s instructions. Pack into timbale molds or custard cups, and freeze until firm, 6 hours or overnight. Serve with sliced mango and a squeeze of lime.
